My Low Histamine Experiment

I do want to note that I stayed on all my regular medications and vitamins.  They may or may not be high histamine but going off any of them at this point would not be advisable.  Since I am so symptomatic on the medications I should be able to note any differences while I am on them as well.
All food is fresh or was frozen immediately after it was cooked to eat at a later time.

If I write that no issues are noted, etc, it does not mean that I feel great.  It simply means that there is nothing new going on or above my baseline symptoms.

Week One

Day 1: 04/28/14

Breakfast
Two hard boiled eggs
Two kiwi

Result: No heartburn, bloating or nausea noted

Snack 1
Oat and Wheat Muffin

Result: Bloating noted.

Lunch
Oat and Wheat Muffin
Hard boiled egg
Pear

Result: Still some bloating present

Snack 2
Freshly peeled carrots

Result:  Still hungry!  No physical issues.

Dinner
Chicken legs seasoned with salt and black pepper
Rice with butter and salt
Cooked broccoli, carrots and cauliflower

Result: No issues noted.

Snack 3
I still felt hungry and was concerned about my calorie intake (nursing mom!) so..
Air popped popcorn with butter and salt

Result: Full!  Nothing else to note.

Day 2: 04/29/14

Breakfast
Hard boiled egg
Wheat and Oat Muffin

Result: Heartburn.  :(  Will likely have to take out wheat and/or grains...unless this is just a problem with bleached flour.  I need to go out and buy the unbleached still.

Lunch
Chicken legs seasoned with salt and black pepper
Rice with butter and salt
Cooked broccoli, carrots and cauliflower

Result: Lingering heartburn.

Snack 1
Apple

Result: Lingering heartburn.

Snack 2
Air popped popcorn with butter and salt (the kids wanted it!)

Result: Lingering heartburn still.  Ugh.

Dinner
Taco Salad with allowed spices and veggies (Ground beef flavored with salt, black pepper, red pepper, onion, garlic and oregano.  Red Leaf Lettuce with carrots, cucumbers, green pepper and celery)

Result: Heartburn now mostly gone.  It is very interesting that red pepper was not the culprit in my previous taco experiences.  Paprika, Cumin and Cayenne are considered high histamine.

Snack 3
Kiwi

Result:  Still some heartburn when reclining.

Day 3: 04/30/14

Breakfast
Two hard boiled eggs
Apple

Result: Nothing to report.

Snack 1
Rice, broccoli, cauliflower and carrots with butter and salt.

Result:  Nausea but it has been raining and my sinuses are awful which generally means that I have nausea. I'd usually have something like bread to help but that is high histamine.

Lunch
Taco Salad with allowed spices and veggies (Ground beef flavored with salt, black pepper, red pepper, onion, garlic and oregano.  Red Leaf Lettuce with carrots, cucumbers, green pepper and celery)

Result: I feel ok, actually.  Clearer.

Snack 2
Peanuts

Result: Better, could tell my blood sugars were getting low.

Dinner
Pork tenderloin seasoned with olive oil, thyme, oregano, onion, garlic, black pepper and salt
Spaghetti noodles with butter and salt
Red Leaf Lettuce with carrots, cucumbers, green pepper and celery

Result: Nothing to note.  Maybe the wheat issue was because it was bleached (which I normally don't buy).

Overall today was not pleasant, especially in the evening.  It rained for about 24 hours straight which gave me headaches, post nasal drip increase, nausea and fatigue.

Day 4: 05/01/14

I am definitely loosing weight.  Need to eat more!

Breakfast
Oatmeal made with whole milk and brown sugar

Result:  Wow, I forgot how filling that is!  I just feel full.

Lunch
Pork tenderloin seasoned with olive oil, thyme, oregano, onion, garlic, black pepper and salt
Spaghetti noodles with butter and salt

Result: Nothing to report.

Snack 1
Nature Valley Roasted Nut Crunch bar - Almond Crunch.

Result:  Headache increased.  The bar did say that it had a color added.  Weird sensation in mouth later on. Ugh.  It was a good bar.  Then came the heartburn.  Oh, well.  Then the fatigue and physical pain.

Dinner
Chicken legs with salt, black pepper and onion
Rice with butter and salt
Asparagus

Result:  Can't tell.  Still messed up from that bar.  I guess this diet will make it much easier for me to figure out my triggers.

Snack 2
Peanuts

Results:  Still can't tell.

Definitely need more fruits and veggies!

Day 5: 05/02/14

Breakfast
Oatmeal made with whole milk and brown sugar

Result:  Full.  Hands started itching last night from that bar, too.  Most of the other symptoms are dissipating.

Snack 1
Carrots

Result.  Nothing to report

Lunch
Chicken legs with salt, black pepper and onion
Rice with butter and salt

Result:  Feeling a bit weird today but I have been super busy.  Calories likely low.

Snack 2
Peanuts

Results.  Fine but getting a rash on my hands from washing them at the doctor's office.

Snack 3
Popcorn
Results: Nothing besides the rash from the soap.  Itches!

Dinner
Meatloaf made with the Wheat Oatmeal Muffins, Onions, Parsley, Italian Seasonings, Black Pepper, Salt, Eggs and Milk
Asparagus
Wheat Noodles

Result: Nothing to report.  Rash still unpleasant.

Snack 4
Pear

Result:  I am very tired and my eye lids itch and are swelling.  I am super tired and this can just happen with fatigue.

Day 6: 05/03/14

I'm down at least eight pounds since I started this diet.  I talked with other MCAD people and this is fairly normal.  They claim that it is weight related to inflammation which could be very true for me.  In any case, I am nursing my 9 month old right now so I am going to really work at eating more just in case.

Breakfast
Pancakes with Maple Syrup (unbleached flour now)
Scrambled Eggs

Results:  Eye lids are still itchy and swollen (mostly right side).  Rash is improved.

Snack 1
Kiwi
Peanuts

Result:  Eye lids are still bothering me.

Lunch
Meatloaf made with the Wheat Oatmeal Muffins, Onions, Parsely, Italian Seasonings, Black Pepper, Salt, Eggs and Milk
Wheat Noodles
Carrots

Result: Eye lids still not fun.

Snack 2
Peanuts
Sunflower Seeds

Results: Eye lids worsening (we did go out to a festival and walked around in the sun as well).  Hives starting. Took an antihistamine.  Wheat is out.  :( Sunflower seeds might be an issue, too.  They were also in the those bars to which I reacted.  I'll keep them out for now and might try them again later.

Dinner
Chicken breasts seasoned with salt, pepper, onion and garlic
Rice with butter and salt
Salad (romaine lettuce, cucumbers, broccoli, carrots, green pepper and onion)

Result: Eyes and hives still.

Day 7: 05/04/14

Weight steady (really up one pound) but since I did have a reaction yesterday I am not sure if the weight is real or just water/inflammation weight.  Time will tell.

Breakfast
Oatmeal with whole milk and brown sugar

Result:  Nothing new.  Eyes still not happy but better, hives still present but not very itchy.

Lunch
Chicken breasts seasoned with salt, pepper, onion and garlic
Rice with butter and salt

Result: Eyes almost back to normal.  Hives not itchy and fading.

Snack 1:
Lots of popcorn with butter and salt

Result: Nothing new going on.

Dinner
So we went to cook the remaining beef from when I made the meatloaf and it stunk!  So, maybe my crazy reaction was all that meat and not the wheat?  Perhaps it is very wishful thinking on my part...I'm leaving wheat out for a bit and might try it again at some point.

Scrambled eggs (with milk, butter, salt and pepper)
Pear
Salad (romaine lettuce, cucumbers, broccoli, carrots, green pepper and onion)

Result: Nothing new.

Snack 2
Breyer's Natural Vanilla Ice Cream

Result:  Yum!

Week One Thoughts

Week Two

Day 8: 05/05/14

Today is a high pain day.  It always stinks to wake up with an overall pain level of four.  It nearly always gets to a six by the end of the day.  I will pay close attention the next time I have ice cream to see if this was the cause.  I won’t have any for several days.

Breakfast
Rice Cakes with peanut butter (peanut butter does have palm oil…)
Two hard boiled eggs

Result:  Gastrointestinal issues but my second child is also having issues.  Today might be hard to determine symptoms since I am high pain.

Lunch
Chicken breast with allowed seasonings
Rice with butter and salt
Two kiwis

Result: Nothing to report.

Snack 1
Apple

Result:  Still a high pain today.  I’m taking Tylenol to hopefully notch it back down to a four or less.  Pain went down to a three.

Snack 2
Two peanut butter oatmeal cookies (peanut butter, brown sugar, oatmeal, eggs, baking soda)

Result: Maybe heartburn?  It is hard to tell because the pain today involves much of my body – chest and torso included.

Dinner
Pork Tenderloin with Italian Seasonings, Onion, Garlic, Salt, Pepper and Olive Oil
Rice with butter and salt
Salad (romaine lettuce, cucumbers, broccoli, carrots, green pepper and onion)

Result:  Nothing new.

Day 9: 05/06/14

Breakfast
Oatmeal with whole milk and brown sugar

Result:  Nothing new to report.

Lunch
Pear
Peanut Butter Oatmeal cookie (peanut butter, brown sugar, oatmeal, eggs, baking soda)
Pork Tenderloin with Italian Seasonings, Onion, Garlic, Salt, Pepper and Olive Oil

Result: Nothing to report.

Result: Heartburn and then burning eye lids next morning.

Day 10: 05/07/14

I am feeling much better than that last two days today.  Still some pain but definitely have more energy.  Weight is steady but I am eating until I am FULL and I don’t like doing that.

Breakfast
Quinoa Flakes with salt

Result: Nothing new happening.

Snack 1
Peanut Butter Oatmeal cookie (peanut butter, brown sugar, oatmeal, eggs, baking soda)
Kiwi

Result: I am itchy now but it could still be from the wheat.  I’ve had kiwi and these cookies several times without issue.

Lunch
Chicken with allowed seasonings
Carrots

Result: Eye lids still itchy, the rest not so much.  Heartburn still lingering.

Snack 2

Dinner
Since I am better I am trying some potato tonight.  With wheat out I need some other carbs to maintain my weight.  I also started a Quercetin supplement tonight.

Ground beef with allowed seasonings
White Potato

Result: Sinuses felt different (as in clearer/better) pretty quick.  Wishful thinking?

Snack 3
Peanut Butter Oatmeal cookie (peanut butter, brown sugar, oatmeal, eggs, baking soda) These are more like cookies when eaten straight from the freezer as I have been doing.

Result: Heartburn still hanging around a bit.

Day 11: 05/08/14

Breakfast
Oatmeal with whole milk and brown sugar

Result: Nothing new.

Result: Nothing new.  Hand rash 100% gone (my skin actually looks and feels great)

Lunch
Ground beef with allowed seasonings
White Potato
Peanut Butter Oatmeal cookie (peanut butter, brown sugar, oatmeal, eggs, baking soda)
Quercetin

Result: Worsening headache but weather is off.  As I always have a headache and they do regularly worsen, I can’t necessarily link this to food.

Dinner
Pork Chops with red pepper, garlic, pepper and salt

Vitamin C

Result:  Felt heavy in stomach.  Nothing else.

Still itchy from before, right eyelid not great.  Laid down to go to sleep and had to get up to use my inhaler.  Heartburn at night.

Day 33: 05/30/14

Used my inhaler.

Breakfast
Knock off Honey Nut Cheerios
Apple
Vitamin C
(I am out of Quercetin)

Feel awful.  Asthma not good.  Overall week and yucky feeling.

Lunch
Pizza with zillions of histamine things.

Result: I actually feel better.  Calorie issue before?

Sinuses much worse this afternoon.   Is it because I am off Quercetin until I get more tomorrow (my sinuses had felt clearer after I started it)?  Or because of the high histamine food?  Or because of some other reason?

Snack
Five jumbo marshmallows…just because I could.

Result: Nothing new.

Dinner
Chicken with allowed seasonings
Rice with salt
Kale and Spinach
Vitamin C

Result: Nothing new.

Snack
Homemade bread with butter

Chest felt tight.  Used inhaler.  Felt awful so…

Then, felt bad again.  Woozy, fuzzy, weak feeling.  Bad headache, too.  All feels better if I lay down, though, and that is concerning.

Snack
Rice cakes with peanut butter and honey.

Result:  Feel better momentarily.

Got my Quercetin and took some.

Dinner
Typical cook out fare.  I skipped the bread and the fruit.

Result: Nothing right away.  Later eyelids unhappy and rash on hand worse.
